Bajji is an easy to make evening snack. Bajji is usually prepared by dipping in a batter prepared from Besan/ gram flour or Maida. Various varieties of bajjis are there. Egg bajji is prepared by dipping hard boiled egg in besan/ gram flour batter. Here I cut the hard boiled Eggs in half lengthwise, removed the yolks, prepare a filling masala with the yolks, Stuffed the egg whites with this masala, Fried after dipping in a gram flour batter. Take the Hardboiled eggs and cut into half lengthwise. Remove the egg yolks from it. Place the egg yolks in a bowl.
Heat little oil in a pan, Prepare a masala by sauting chopped Onion, Green chilli, Ginger garlic paste, Turmeric Powder, Chilly powder, Pepper Powder and salt together. Add egg yolks and Chopped coriander leaves to it mix well until everything combined well. switch off the flame.
Prepare the bajji batter by mixing gram flour, rice flour, 1/2 Tspn Chilli powder, 1/4 Tspn Turmeric powder, 2 pinch Hing by adding enough water. The consistency of the batter should be like Dosa Batter.
Assemble the Eggs by stuffing the prepared masala in the egg yolk position. Keep it aside.
Heat oil in a deep pan for frying. Now gently dip each stuffed egg in the batter and drop it in the hot oil. Fry the bajji until it turns golden in colour on medium flame. Remove the fried bajji into a paper towel and serve hot with tomato ketchup.
