Goan Chicken Curry is having a mild flavoured gravy with yumminess of coconut milk. I served this Goan Chicken Curry with Plain Rice Pilaf.
Marinate the chicken pieces with salt, turmeric powder and lemon juice l. Set aside for 15 minutes.
Heat oil in a pan or a vessel, add ginger-garlic paste, stir well. Add onion, mix and saute on high heat till translucent. Then add chicken pieces, mix well and cook for 1 minute. Add garam masala powder, chilli powder and cumin powder, mix well and cook till the oil separates.
Add chicken stock, stir to mix, cover and bring to a boil. Lower heat and simmer for 10 minutes. I used Maggi Chicken Stock cubes along with 2-3 cups of water.
Once the chicken is cooked well add coconut milk, mix well and simmer for 3-4 minutes. Garnish with chopped coriander leaves(Optional).
Serve hot with with roti, naan, chappathi, rice etc.
