Fish Mango Curry

- Fish – 500 gram
- Mangoes diced – 1 small
- Onion – ½ (nicely chopped)
- Shallots- 5-6
- Ginger garlic paste – 2-3 tspn
- Green chilly-2
- Turmeric powder- 1/2 tspn
- Chilly powder- 1 1/2 tspn
- Coriander powder – 1 tspn
- Fenugreek seeds – 1/3 tspn
- Thick coconut milk- 3/4 cup
- Thin coconut milk- 1 cup
- Curry leaves – few
- Coconut oil – as needed

- Clean and cut fish and keep aside.
- Heat oil in a pan and add fenugreek seeds. When they splutter add onion and curry leaves followed by shallots and ginger-garlic paste.
- Saute till onions have changed colour and ginger has nice aroma. Add turmeric powder, chilly powder, coriander powder and saute for a few seconds and add mango pieces and green chilly.
- Add thin coconut milk and allow this come to boil. Add fish pieces to it, cover and cook in medium flame till fish is cooked.
- Add thick coconut milk and don’t allow the curry to boil. Finally add few fresh curry leaves(optional) and a few drops of coconut oil on top.
