Kaipola/ Malabar Kaipola

Kaipola is also called banana cake/steamed banana cake etc. is one of a famous authentic Malabar iftar special snack. The round shaped cake is completely steamed with the extra ordinary flavours of banana and eggs mainly. Kaipola is an easy and quick recipe commonly seen in mainly of muslim community houses. Even though I can assure that all of you will love the fascinating smell and flavours.

The cake is mainly hold banana and eggs,butter with milk powder and cardamom powder. I have made it in a pressure cooker,and you can use oven or any steamer for the making but should know the timing perfectly. I have used cooker because it is easy to monitor the progress in time. Anyways it is upto you friends. I have garnished my cake with some fried cashews only because my husband was so hurry to taste it and you can use any nuts to garnish and it will enhance the aroma more.

  • Banana(ripe) – 2 big(cut in to small cubed pieces)
  • Egg – 4 nos
  • Sugar – 3-4 Tbspn
  • Milk powder – 3 Tbspn
  • Cardamom – 1/4 Tspn
  • Ghee/ Butter – 1 Tbspn
  • Cashew nuts – 2 Tbspn
  • Raisins – 1 Tbspn

  1. Heat ghee/ butter in a pan and saute banana well . Mix eggs, milk powder, sugar and cardamom together and blend in a mixer or beat well using a egg beater.
  2. Heat 1/2 Tbspn ghee in a cooker and pour the half of the egg mix . Then distribute half of the cooked banana on top . Make another same layer of egg mix and cooked banana, Then garnish with fried nuts and raisins on top .
  3. Close the pressure cooker and lid without putting “weight” . Lower the flame to the minimum. Cook for 20 minutes, after that switch off the flame, keep the lid closed and allow to cool for sometime .(you can cook in steam also).
